Dhall Pouri with Rougaille & Chatini Coco

Thin dhall-filled flatbread (dholl puri) pan-grilled with minimal oil, served with rougaille pomme d'amour or poisson salé, and fresh chatini coco. A Mauritian street classic, reimagined lighter — same soft, fragrant bite.

Ingredients

  • • Dholl puri flatbread (split-pea & wheat flour, dhal filling)
  • • Rougaille pomme d'amour (tomato, onion, garlic, thyme)
  • • Poisson salé (salted fish, lightly desalted)
  • • Chatini coco (fresh coconut, green chilli, coriander, lime)
  • • Curry leaves, cumin
  • • Rice flour for griddle

Preparation

  1. 1Roll thin dhall-stuffed flatbread and griddle with a trace of oil
  2. 2Simmer the rougaille with desalted poisson salé, herbs and minimal salt
  3. 3Mix the chatini coco fresh, with less chilli on request (milder)
  4. 4Stack the puri and serve with both accompaniments

Cultural note

Dholl puri is a beloved Mauritian street snack — Indian in origin, Creole by adoption. KliT grills instead of frying and trims the salt so the dhal aroma leads.
